curry.
i used to think that i did not like curry. because my dad did not like curry. then i tried the coconut curry veggies at p.f. chang’s. they are… scrumptious.
a year or so ago michael and i tried the local thai food place in our town - one of the very few non-chain restaurants. we got a yummy thai dish and since then it’s been a regular spot for us to go on date night.
last night for our date we went to the thai restaurant. kind of on an impulse we ordered the panang curry, not really sure what to expect (though the waitress did almost literally swoon as she was describing it). we got an order of spring rolls to munch on while we were waiting… they’re amazing. literally amazing. thin, crispy shell stuffed with lots of veggies and a very light tasting sauce.
and then… the panang curry arrived. y’all… it was phenomenal! thai comfort food, for sure. the sauce was kind of a coconut milk/panang curry sauce. the main substance of the dish was super tender chicken and bell peppers with a hint of lemon verbena for seasoning. crazy good.
